Having eaten chicken cooked by our “dear writer”, I can attest to the benefits of her cooking methods. She baked a spatchcocked chicken on one of my visits to Paris chez Elle, and it was the most divine I’d ever eaten.

those were barbecued spatchcocked cornish game hens and the same person who i bought them from at the saturday market on the place edith piaf is the person who gave me the cold oven tip. it changed my life.
